Escabeche de liebre

Escabeche de liebre: sirve 4 porciones.

Ingredientes

2-3 cucharadas de aceite

4 trutros grandes de liebre, deshuesados

4 cebollas, en cuartos

4 zanahorias, en rodajas delgadas

2 hojas de laurel

4 clavos de olor

Sal y pimienta en granos

½ taza (120 cc) de vino blanco

½ taza (120 cc) de vinagre de vino blanco

½ taza (120 cc) de aceite

1 cucharada de azúcar rubia

Preparación

1. En un sartén calentar 2-3 cucharadas de aceite a fuego medio-alto y dorar los trutros de liebre; retirar y reservar.

2. Precalentar el horno a temperatura media (180°C).

3. En una fuente u olla grande para horno ir armando el escabeche colocando por capas las cebollas en cuartos, zanahorias en rodajas delgadas, presas reservadas de liebre, hojas de laurel, clavos de olor, sal y granos de pimienta. Rociar con el vino, vinagre y ½ taza de aceite y espolvorear la superficie con el azúcar. Tapar y hornear 1½ horas o hasta que la carne de liebre esté muy blanda.

4. Retirar la fuente u olla del horno y dejar enfriar el escabeche en la misma fuente u olla hasta el día siguiente. Servir el escabeche de liebre frío acompañado de las verduras de la cocción.

PICKLED HARE

(makes 4 servings)

European hare (lepus capensis) in Chile’s Austral Region is an introduced species from Europe, along with other species considered exotic, or not indigenous to the place, that have been introduced voluntarily like the wild boar and the red deer. Hare offers a very tasty and aromatic meat, with a stronger taste than rabbit because it retains the aroma of the consumed herbs.

2-3 tablespoons oil

4 hare thighs, boned

4 onions, quartered

4 carrots, thinly sliced

2 bay leaves

Salt and peppercorns

½ cup white wine

½ cup white wine vinegar

½ cup brown sugar

1. In a skillet heat 2-3 tablespoon of oil over medium-high heat and brown the hare pieces: remove and set aside.

2. Preheat oven to medium temperature (350°F).

3. In a large ovenproof dish or pot start assembling the recipe by placing in layers the onions, carrots, reserved hare, bay leaves, cloves, salt and peppercorns. Baste with wine, vinegar and ½ cup oil and sprinkle the surface with sugar. Cover and bake 1½ hours or until the hare meat is very tender.

4. Remove the dish or pot from the oven and let cool the ingredients in the same dish or pot until the next day. Serve the pickled hare cold accompanied by the cooked vegetables.
